Corn Chowder

Nothing like a nice hot soup to warm you on a cold winter day.
This is one of my favorites!

Corn Chowder:

Melt
2TB Butter
Splash of Olive Oil

Saute chopped
1 medium onion
2 stalks celery
2-3 cloves garlic
Thyme- to taste

Cook until veggies are translucent
Add 1/4 cup flour, mix well

Add 4-5 cups of broth (chicken or vegetable)
Bring to a boil

Add 2 cups milk & 3-4 chopped potatoes
Bring to boil for about 8-10 minutes

When potatoes are cooked
Add frozen corn (as much as you like)
Add canned smoked trout (any smoked fish will do, or smoked bacon)

YUMMY!
Great with a nice salad and some good bread.

Ummhh Umh good, I'm chowing on a bowl of this right now and it is tasty... with Asaigo cheese bread on the side, it's a nice little meal.
